Tuesday Haiku: Real People Recipes
Since I missed last week’s Haiku Tuesday I am going to make this week a Haiku / Recipe Combo:
I do LOVE me some veggies
But not when scary!!
For the Good of all Man Kind, God made me a big dork. Because, if it were up to me I would be far more pretentious than I am already. I would have style to go along with my grace and beauty. I would eat only clean, organic food like Kale in everything I ate. I would feel comfortable at Whole Foods and not feel like I was going to be ‘found out’ and booted from the place because all I could think about is “I WISH I COULD TAKE A PICTURE OF THIS RIDICULOUS FOOD & BLOG ABOUT IT”. Sometimes when I am browsing through Pinterest at recipes I think “Seriously? You people are going to buy Pitaya fruit and cardamon and pink peppercorns and lemon grass? You are going to have lychees on hand or lavendar for tea cakes? I WANT to cook with figs! AND GOAT CHEESE!
BUT since I am a woman of simple tastes I decided to share a few of what I call “Real People Recipes” and NOT because they are made of REAL PEOPLE! (Though I would not be shocked to find out that Kale is really SOILENT GREEN!!) But because I want to share some easy and cheap vegetables that I like to fill up on! First up is plain old ordinary cooked cabbage. I happen to LOVE this stuff. I put a little bit of spice in there to kick it up. You can eat this until it is coming out of your ears and still have used up virtually zero calories. And if you aren’t worried about those pesky calories you can top it with butter and make it all that much better. But I have to confess that I hate you.
Start out with a head of cabbage and get rid of the core. Unless you are a weird German person like my father who loved the core. Weird. (Side note: I am not a Nationalist. I happen to be part German. But they eat weird stuff. I am emotionally scarred from eating at my grandma’s house. Let’s just say she was disapointed in my dis-interest in head cheese.) Anyhow…. Chop up the cabbage in bite sized pieces and put into a big pot. Add one chopped onion. I cheat and buy frozen chopped onions for things like this. SO EASY! And virtually no tears, unless I start thinking about my tragic love life. I digress. I add a Tbl of salt, 1/4 tsp of black pepper and about 1/8 tsp of crushed red pepper flakes. Give or take on the peppers. We like things spicy in my house! Then add a can of broth (chicken if you are not vegetarian) and then water to cover the cabbage. Cook this for about 30-45 minutes or until the cabbage is soft. This is also a great start to a terrific cabbage soup: to this base I would add a can of V-8 juice, a can of diced stewed tomatoes and whatever veggies you like (carrots, corn, peas, green beans etc…) some beans for protein and chicken if you are so inclined. I don’t eat a lot of meat and I like this soup to be of the Zero Point free food variety so I usually stop at the veggies.
To Summarize: Kale is NOT People. Real people do not make smoothies from Dragon Fruit. And just say “No” to Head Cheese.
